Turkey and avocado roll-ups with a side of olives
Serve these Turkey and Avocado Roll-Ups chilled for a refreshing snack or light lunch. Pair them with a side of black olives to add a burst of briny flavor. You can also drizzle a bit of olive oil or balsamic vinegar over the roll-ups for an extra touch of richness.
8 slices of organic/natural turkey breast (nitrate-free)
1 ripe avocado, thinly sliced
1/2 cup cucumber, julienned
1/4 cup red bell pepper, thinly sliced
2 tablespoons cream cheese (full-fat or a dairy-free alternative)
1 tablespoon fresh lemon juice
Salt and pepper to taste
1/4 cup black olives, pitted
Lay out the turkey slices on a clean surface.
In a small bowl, mix the cream cheese with lemon juice, salt, and pepper until well combined.
Spread a thin layer of the cream cheese mixture onto each turkey slice.
Place a few slices of avocado, julienned cucumber, and red bell pepper on top of the cream cheese-covered turkey slices.
Carefully roll up each turkey slice, securing them with toothpicks if necessary.
Arrange the roll-ups on a serving platter and garnish with black olives on the side.
