Ingredients

  • 1 medium ripe avocado

  • 1 small can of tuna in water, drained

  • 1 tablespoon mayonnaise (look for a sugar-free or low-sugar option)

  • 1 tablespoon diced red onion

  • 1 tablespoon diced celery

  • 1 tablespoon chopped fresh parsley

  • 1/2 teaspoon Dijon mustard

  • Salt and pepper to taste

  • Fresh lemon wedges (for serving)

Directions

  1. Cut the avocado in half lengthwise and remove the pit. Scoop out a bit of flesh from each avocado half to create more space for the filling, if desired. Reserve the scooped-out flesh for another use or discard.

  2. In a bowl, combine the drained tuna, mayonnaise, red onion, celery, parsley, Dijon mustard, salt, and pepper. Mix well to combine.

  3. Spoon the tuna mixture into the hollowed-out avocado halves, dividing it equally between the two halves.

  4. Squeeze fresh lemon juice over the stuffed avocados.

  5. Serve immediately and enjoy!
