1 medium ripe avocado
1 small can of tuna in water, drained
1 tablespoon mayonnaise (look for a sugar-free or low-sugar option)
1 tablespoon diced red onion
1 tablespoon diced celery
1 tablespoon chopped fresh parsley
1/2 teaspoon Dijon mustard
Salt and pepper to taste
Fresh lemon wedges (for serving)
Directions
Cut the avocado in half lengthwise and remove the pit. Scoop out a bit of flesh from each avocado half to create more space for the filling, if desired. Reserve the scooped-out flesh for another use or discard.
In a bowl, combine the drained tuna, mayonnaise, red onion, celery, parsley, Dijon mustard, salt, and pepper. Mix well to combine.
Spoon the tuna mixture into the hollowed-out avocado halves, dividing it equally between the two halves.
