Ingredients

  • 2 tbsp olive oil

  • 6 scallions (green onions), sliced

  • 1 tbsp ginger, finely chopped

  • 2 garlic cloves, finely chopped

  • ½ tsp ground coriander

  • 1 lb large shrimp, peeled and deveined

  • ½ tsp sea salt

  • 1 tsp fresh lemon juice

  • ½ tsp black pepper

  • lemon wedges, for serving

Directions

  1. In a large skillet, heat the olive oil over medium-high heat.

  2. Add the sliced scallions, finely chopped ginger, and finely chopped garlic cloves to the skillet. Sauté for about 2 minutes until fragrant and slightly softened.

  3. Sprinkle the ground coriander over the scallion mixture and stir well to combine.

  4. Add the peeled and deveined shrimp to the skillet. Cook for about 2-3 minutes per side until the shrimp turn pink and are cooked through.

  5. Season the shrimp with sea salt, fresh lemon juice, and black pepper. Stir to coat the shrimp evenly with the seasonings.
