Ingredients

  • 4 oz shrimp

  • 2 medium zucchinis, spiralized or chopped into thin noodles

  • 1/2 onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1/4 teaspoon red pepper flakes (optional)

  • Salt and pepper to taste

  • Fresh parsley or cilantro, chopped, for garnish

Directions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until soft and translucent, about 5 minutes.

  2. Add the minced garlic and red pepper flakes (if using) and cook for another minute, until fragrant.

  3. Add the zucchini noodles to the skillet and season with salt and pepper to taste. Cook for 5-7 minutes, until the noodles, are tender but not mushy.

  4. Push the zucchini noodles to the side of the skillet and add the shrimp in a single layer. Cook for 2-3 minutes on each side, until pink and opaque.

  5. Stir the shrimp and zucchini noodles together and cook for another minute, until heated through.

  6. Serve hot, garnished with chopped parsley or cilantro.
