4 large eggs (organic, pasture-raised if possible)
4 slices of turkey scrapple (look for a brand with minimal additives and preservatives)
1 tablespoon olive oil or avocado oil
Salt and pepper to taste
Fresh herbs (such as parsley or chives) for garnish (optional)
Directions
Heat a non-stick skillet over medium heat and add the olive oil or avocado oil.
While the oil is heating, beat the eggs in a bowl and season with a pinch of salt and pepper.
Once the oil is hot, add the turkey scrapple slices to the skillet. Cook them for about 2-3 minutes on each side until they are browned and heated through. Set them aside on a plate.
