  • 4 large eggs (organic, pasture-raised if possible)

  • 4 slices of turkey scrapple (look for a brand with minimal additives and preservatives)

  • 1 tablespoon olive oil or avocado oil

  • Salt and pepper to taste

  • Fresh herbs (such as parsley or chives) for garnish (optional)


  1. Heat a non-stick skillet over medium heat and add the olive oil or avocado oil.

  2. While the oil is heating, beat the eggs in a bowl and season with a pinch of salt and pepper.
