  • 8 ounces (225g) canned tuna in water (choose a brand without added sugars)

  • 4 cups mixed salad greens

  • 4 hard-boiled eggs, sliced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup sliced cucumber

  • 1/4 cup sliced red onion

  • 1/4 cup sliced black olives

  • 2 tablespoons capers

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste


  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing. Set aside.

  2. Drain the canned tuna and flake it into a large bowl. Add the sliced red onion, cherry tomatoes, sliced cucumber, black olives, and capers to the bowl. Toss gently to combine.
