8 ounces (225g) canned tuna in water (choose a brand without added sugars)
4 cups mixed salad greens
4 hard-boiled eggs, sliced
1 cup cherry tomatoes, halved
1/2 cup sliced cucumber
1/4 cup sliced red onion
1/4 cup sliced black olives
2 tablespoons capers
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste
Directions
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing. Set aside.
Drain the canned tuna and flake it into a large bowl. Add the sliced red onion, cherry tomatoes, sliced cucumber, black olives, and capers to the bowl. Toss gently to combine.
