For the Portobello "Buns":
4 large Portobello mushrooms (choose ones that are firm and have a good shape)
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
For the Burger Patties:
300g lean ground turkey or chicken (you can also use lean ground beef or plant-based alternatives if preferred)
1/4 cup finely chopped onion
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon paprika
Salt and pepper to taste
For Toppings and Assembly:
4 large lettuce leaves (butter lettuce or romaine work well)
4 slices of tomato
4 slices of red onion
4 slices of avocado
Mustard or sugar-free ketchup (optional)
Directions
Preheat the grill or stovetop griddle over medium heat.
Prepare the Portobello "buns": Gently remove the stems and clean the Portobello mushrooms with a damp cloth. In a small bowl, mix the olive oil, balsamic vinegar, salt, and pepper. Brush the mushroom caps with the mixture on both sides.
Grill the Portobello mushrooms for about 5 minutes per side until they are tender and slightly charred. Set them aside.
For the burger patties: In a medium bowl, combine the ground turkey or chicken with chopped onion, minced garlic, dried oregano, dried basil, paprika, salt, and pepper. Mix everything thoroughly.
Divide the mixture into two equal portions and shape them into burger patties.
Grill the burger patties for about 4-5 minutes per side or until they are cooked through and reach an internal temperature of 165°F (74°C).
Assemble the burgers: Place a lettuce leaf on the bottom Portobello "bun." Add one burger patty on top, followed by a slice of tomato, red onion, and avocado. If desired, add some mustard or sugar-free ketchup on top of the toppings.
Finish assembling the burgers by placing the top Portobello "bun" on each.
Serve the Portobello mushroom burgers immediately and enjoy!
