Ingredients

             1 cup of broccoli florets

             1/2 block of firm tofu, drained and diced

             4 oz of sashimi-grade salmon, diced

             1 tbsp of toasted sesame seeds

             1 tbsp of coconut aminos

             1 tbsp of rice vinegar

             1 tsp of grated ginger

             1/4 tsp of garlic powder

             1/4 tsp of salt

Directions

  1. In a small bowl, combine the coconut aminos, rice vinegar, grated ginger, garlic powder, and salt. Mix well to create the marinade.


  2. Place the diced tofu in a shallow dish and pour half of the marinade over it. Gently toss the tofu to coat it evenly. Set it aside to marinate for about 10 minutes.


  3. In a medium-sized pot, bring water to a boil. Add the broccoli florets and cook for 2-3 minutes until they become slightly tender but still crisp. Drain the broccoli and set it aside.


  4. In a separate bowl, combine the diced salmon with the remaining marinade. Toss gently to coat the salmon. Let it marinate for 5 minutes.


  5. Heat a non-stick skillet over medium heat. Add the marinated tofu and cook for 3-4 minutes, stirring occasionally, until it becomes lightly browned and crispy on the edges. Remove the tofu from the skillet and set it aside.


  6. In the same skillet, add the marinated salmon and cook for 1-2 minutes, stirring gently, until the salmon is just cooked through. Be careful not to overcook it.


  7. To assemble the bowl, place the cooked broccoli florets in the bottom of a serving bowl. Top it with the cooked tofu and salmon.


  8. Sprinkle the toasted sesame seeds over the bowl. 

  9. Serve the Poke Tofu Salmon Bowl with Broccoli and Sesame Seeds immediately and enjoy!
