Ingredients

  • 2 large eggs

  • 2 tablespoons water

  • 2 slices of fresh country ham (low-sodium if available), chopped

  • 2 tablespoons shredded cheese (choose a low-fat variety)

  • 1/4 avocado, sliced

  • Salt and pepper to taste

  • Fresh herbs for garnish (optional)

Directions

  1. In a bowl, whisk together the eggs and water until well combined. Season with salt and pepper.

  2. Heat a non-stick skillet over medium heat. Spray it with cooking spray or add a small amount of oil.

  3. Pour the egg mixture into the skillet and tilt the pan to spread the eggs evenly.

  4. Cook the eggs for a few minutes until the edges start to set.

  5. Sprinkle the chopped country ham and shredded cheese evenly over one side of the omelet.

  6. Using a spatula, carefully fold the other side of the omelet over the ham and cheese to create a half-moon shape.

  7. Continue cooking for another minute or so until the cheese melts and the ham warms through.

  8. Slide the omelet onto a plate and garnish with fresh herbs if desired.

  9. Serve the omelet with avocado slices on the side.
