  • 2 large eggs

  • 2 tablespoons water

  • 2 slices of fresh country ham (low-sodium if available), chopped

  • 2 tablespoons shredded cheese (choose a low-fat variety)

  • 1/4 avocado, sliced

  • Salt and pepper to taste

  • Fresh herbs for garnish (optional)


  1. In a bowl, whisk together the eggs and water until well combined. Season with salt and pepper.
