2 tablespoons water
2 slices of fresh country ham (low-sodium if available), chopped
2 tablespoons shredded cheese (choose a low-fat variety)
1/4 avocado, sliced
Salt and pepper to taste

In a bowl, whisk together the eggs and water until well combined. Season with salt and pepper.
Heat a non-stick skillet over medium heat. Spray it with cooking spray or add a small amount of oil.
