Ingredients

For the salmon:


  • 2 salmon fillets (about 6 ounces each)

  • 1 tablespoon olive oil

  • 2 tablespoons freshly squeezed lemon juice

  • 1 teaspoon dried dill

  • Salt and pepper to taste


For the steamed broccoli:


  • 4 cups broccoli florets

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Directions

  1. Preheat your grill to medium-high heat.

  2. In a small bowl, combine the olive oil, lemon juice, dried dill, salt, and pepper to make a marinade for the salmon.

  3. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for about 10-15 minutes.

  4. While the salmon is marinating, prepare the broccoli. Fill a large pot with about an inch of water and place a steamer basket inside. Bring the water to a boil.

  5. Add the broccoli florets to the steamer basket, cover the pot, and steam for about 5-7 minutes or until the broccoli is tender yet crisp. Be careful not to overcook it.

  6. While the broccoli is steaming, remove the salmon fillets from the marinade and discard the remaining marinade.

  7. Grill the salmon fillets on the preheated grill for about 4-5 minutes per side, or until they are cooked through and easily flake with a fork.

  8. Once the salmon is done, remove it from the grill and let it rest for a few minutes.

  9. In a separate bowl, toss the steamed broccoli with olive oil, salt, and pepper to taste.

  10. Serve the grilled salmon with a squeeze of fresh lemon juice, a sprinkle of fresh dill, and the steamed broccoli on the side.
