Ingredients

  • 1/4 pound fresh mussels, cleaned and debearded

  • 1/4 pound fresh clams, cleaned

  • 1 medium zucchini, sliced

  • 1 tablespoon olive oil

  • 1 clove garlic, minced

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon red pepper flakes (optional, adjust to taste)

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

Directions

  1. Preheat your oven to 400°F (200°C).

  2. In a large pot, bring water to a boil and blanch the mussels and clams for about 2 minutes to partially cook them. Drain and set aside.

  3. Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  4. Add the sliced zucchini to the skillet and sprinkle with dried oregano, red pepper flakes (if using), salt, and pepper. Sauté the zucchini for about 5-7 minutes until tender and lightly browned. Remove from heat and set aside.

  5. In a baking dish, arrange the partially cooked mussels and clams along with the sautéed zucchini.

  6. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for about 10-12 minutes until the clams and mussels have fully opened.

  7. Remove the baking dish from the oven and discard any unopened clams or mussels.

  8. Transfer the cooked clams, mussels, and zucchini to a serving plate. Drizzle with any remaining juices from the baking dish.

  9. Garnish with fresh parsley and serve immediately.
