4 ounces of chicken breast
1/4 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon onion, chopped
1 clove garlic, crushed
1/4 cup diced tomatoes
2 tablespoons chopped fresh cilantro
Lettuce leaves or low carb tortillas for serving
Optional toppings: avocado, sour cream, shredded cheese
Directions
In a small bowl, mix together the cumin, paprika, chili powder, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture all over the chicken breast.
Heat the olive oil in a frying pan over medium-high heat. Add the chicken breast and cook until browned on both sides and cooked through, about 6-8 minutes per side. Remove from the pan and let rest.
In the same pan, add the chopped onion and garlic and cook until softened, about 2-3 minutes. Add the diced tomatoes and cilantro and cook for another 2-3 minutes, until the tomatoes are soft and the mixture is fragrant.
Slice the chicken breast into strips and add it back to the pan, stirring to combine with the tomato mixture.
Serve the chicken taco filling in lettuce leaves or low carb tortillas. Add any desired toppings, such as avocado, sour cream, or shredded cheese.
