Ingredients

  • 1/2 pound lean ground beef

  • 1 tablespoon olive oil

  • 1/2 medium onion, finely diced

  • 2 cloves garlic, minced

  • 1 tablespoon low-sodium soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon sesame oil

  • 1 teaspoon ground ginger

  • 1 teaspoon chili garlic sauce (adjust to your spice preference)

  • Salt and pepper to taste

  • 1 head of iceberg or butter lettuce, washed and separated into leaves

  • 1 cup cherry tomatoes, washed

Directions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onions and minced garlic, and sauté until the onions become translucent and fragrant.

  2. Now, add the lean ground beef to the skillet. Break it up with a spatula and cook it until it's no longer pink and nicely browned.

  3. While the beef is cooking, let's make the sauce. In a small bowl, combine the low-sodium soy sauce, rice vinegar, sesame oil, ground ginger, and chili garlic sauce. Mix well.

  4. Pour the sauce over the cooked beef in the skillet and give it a good stir. Let it simmer for a couple of minutes so that the flavors can blend together. Season with salt and pepper to taste.

  5. While the beef is simmering, wash the lettuce leaves and cherry tomatoes thoroughly.

  6. Assemble the lettuce wraps by placing a spoonful of the beef mixture into each lettuce leaf. You can add extra sliced vegetables like bell peppers or cucumber for extra crunch if you like.
