Ingredients

  • 4 medium-sized zucchinis, spiralized into noodles

  • 1 pound of large shrimp, peeled and deveined

  • 2 tablespoons olive oil

  • Salt and pepper to taste


For the Pesto:


  • 2 cups fresh basil leaves

  • 1/2 cup Parmesan cheese, grated

  • 1/2 cup pine nuts

  • 2 garlic cloves

  • 1/2 cup extra virgin olive oil

  • Salt and pepper to taste

Directions

  1. Grill the Shrimp:


    • Preheat your grill to medium-high heat.

    • Toss shrimp with olive oil, salt, and pepper.

    • Grill shrimp for 2-3 minutes per side or until they are opaque and cooked through.


  2. Make Zucchini Noodles:


    • Spiralize zucchinis into noodles using a spiralizer.

    • Sauté the zucchini noodles in a pan with a little olive oil for 2-3 minutes or until tender.


  3. Prepare Pesto:


    • In a food processor, combine basil, Parmesan, pine nuts, and garlic.

    • Pulse until finely chopped.

    • With the processor running, slowly drizzle in olive oil until the pesto reaches your desired consistency.

    • Season with salt and pepper.


  4. Combine and Serve:


    • Toss the grilled shrimp and zucchini noodles with the freshly made pesto.

    • Serve immediately, garnished with additional Parmesan if desired.
