Ingredients

  • 1 medium zucchini, grated

  • 1/4 cup almond flour

  • 1/4 cup grated Parmesan cheese

  • 1 small onion, finely chopped

  • 1 clove garlic, minced

  • 1 egg, beaten

  • 1 tablespoon fresh parsley, chopped

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Olive oil for frying

Directions

  1. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture. Transfer the squeezed zucchini to a mixing bowl.

  2. Add almond flour, grated Parmesan cheese, chopped onion, minced garlic, beaten egg, fresh parsley, salt, and black pepper to the bowl with the zucchini. Mix well until all the ingredients are combined.

  3. Heat a non-stick skillet over medium heat and add a thin layer of olive oil.

  4. Spoon the zucchini mixture onto the skillet, forming small fritters, and flatten them slightly with the back of the spoon.

  5. Cook the fritters for about 3-4 minutes on each side until golden brown. You may need to cook them in batches depending on the size of your skillet.

  6. Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.

  7. Serve the zucchini fritters warm and enjoy as a delicious low-carb, high-protein meal.
