Ingredients

  • 2 slices of whole grain bread (choose organic if possible)

  • 1 ripe avocado

  • 2 large eggs (organic, if available)

  • Salt and pepper to taste

  • Optional toppings: cherry tomatoes, microgreens

Directions

  1. Toast the whole grain bread slices to your desired level of crispiness.

  2. While the bread is toasting, mash the ripe avocado in a bowl and season it with a pinch of salt and pepper.

  3. Poach the eggs to your liking. If you're unsure about poaching, you can also opt for a soft-boiled or sunny-side-up egg.

  4. Once the toast is ready, spread the mashed avocado evenly on each slice.
