Ingredients

  • 1 whole fish (about 1-2 lbs.), gutted and scaled

  • 1 lemon, sliced

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 4 cups mixed salad greens

  • 1 cucumber, sliced

  • 1 bell pepper, sliced

  • 1/4 red onion, sliced

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon olive oil

Directions

  1. Preheat the oven to 400°F (200°C).


  2. Rinse the whole fish under cold water and pat it dry with paper towels. Make several diagonal cuts on both sides of the fish, about 1 inch apart.


  3. Stuff the cavity of the fish with lemon slices and minced garlic.


  4. Rub the outside of the fish with olive oil, then season it generously with salt and pepper.


  5. Place the fish on a baking sheet lined with aluminum foil or parchment paper.


  6. Bake the fish in the preheated oven for about 20-25 minutes, or until the flesh is opaque and easily flakes with a fork. Cooking time may vary depending on the size and thickness of the fish, so keep an eye on it.


  7. While the fish is baking, prepare the side salad. Combine the mixed salad greens, cucumber slices, bell pepper slices, and red onion slices in a large bowl.


  8. In a small bowl, whisk together the balsamic vinegar and olive oil to make the dressing for the salad.


  9. Drizzle the dressing over the salad and toss gently to coat the vegetables evenly.


  10. Once the fish is cooked, remove it from the oven and let it rest for a few minutes.
