1 container firm or extra firm tofu, pressed and sliced
1 onion, diced
1 bell pepper, diced
2 large tomatoes, diced
3-4 slices fresh jalapeno pepper
3 tbsp Mrs. Dash Fiesta Lime seasoning
2 tbsp fresh lime juice
½ - ¾ cup water
2 tbsp olive oil
Sea salt and black pepper, to taste
½ head iceberg lettuce, roughly chopped
Directions
Press the tofu: Place the tofu between two plates and put a heavy object on top. Let it sit for 20-30 minutes to remove excess moisture. After pressing, slice the tofu into small cubes.
Heat olive oil in a large skillet over medium heat.
Add diced onion and bell pepper to the skillet. Sauté for about 5 minutes, or until the vegetables are slightly softened.
Add the tofu cubes to the skillet and cook for another 5 minutes, stirring occasionally to ensure even cooking.
In the meantime, prepare the salsa. In a mixing bowl, combine the diced tomatoes, fresh jalapeno pepper slices, Mrs. Dash Fiesta Lime seasoning, fresh lime juice, salt, and black pepper. Mix well to combine.
Once the tofu is lightly browned, pour the salsa mixture into the skillet. Stir to coat the tofu and vegetables evenly.
Add water to the skillet, starting with ½ cup. Stir well and let the mixture simmer for 5-10 minutes, allowing the flavors to meld together. Add more water if needed to achieve the desired consistency.
While the salsa is simmering, roughly chop the iceberg lettuce and set it aside.
Remove the skillet from heat and serve the warm tofu salsa over a bed of chopped iceberg lettuce.
