Ingredients

  • 4 ounces ground turkey

  • 1/4 cup onion, diced

  • 1/4 cup bell pepper, diced

  • 1 garlic clove, minced

  • 1/4 cup tomato sauce (look for a no-sugar-added option)

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon chili powder

  • Salt and pepper to taste

  • 1 cup cauliflower rice (store-bought or homemade)

  • Fresh cilantro, chopped (for garnish)

Directions

  1. Heat a non-stick skillet over medium heat and add the ground turkey. Cook until browned and crumbled, stirring occasionally.

  2. Add the diced onion, bell pepper, and minced garlic to the skillet. Cook for a few minutes until the vegetables are slightly softened.

  3. Stir in the tomato sauce, ground cumin, chili powder, salt, and pepper. Reduce the heat to low and let the mixture simmer for about 5 minutes, allowing the flavors to meld together.

  4. While the turkey mixture simmers, prepare the cauliflower rice. If using store-bought, follow the package instructions. For homemade cauliflower rice, pulse cauliflower florets in a food processor until they resemble rice grains. Cook the cauliflower rice in a separate skillet over medium heat for about 5 minutes until tender.

  5. Once the turkey picadillo is ready, remove it from the heat and serve it over the cauliflower rice. Garnish with fresh cilantro.
