Ingredients

  • 4 whole grain tortillas

  • 1 lb (450g) turkey breast, thinly sliced

  • 2 ripe avocados, sliced

  • 2 cups mixed greens (such as spinach, arugula, or lettuce)

  • 1 cup cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • ¼ cup cilantro leaves, chopped

  • Juice of 1 lime

  • Salt and pepper to taste

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

Directions

  • In a small bowl, whisk together the ingredients for the dressing: olive oil, balsamic vinegar, Dijon mustard, salt, and pepper. Set aside.

  • Lay out the whole grain tortillas and divide the sliced turkey breast, avocado, mixed greens, cherry tomatoes, red onion, and cilantro evenly among them.

  • Drizzle the lime juice over the fillings on each tortilla and season with salt and pepper to taste.

  • Roll up the tortillas tightly, folding in the sides as you go, to form wraps.

  • In a separate bowl, toss the remaining mixed greens, cherry tomatoes, red onion, and cilantro with the prepared dressing to make the side salad.

  • Serve the turkey and avocado wraps with the side salad.
