Ingredients

  • 1 lb. ground turkey

  • 1 tbsp olive oil

  • 1/2 cup diced red onion

  • 1/2 cup diced bell pepper

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • 1/2 tsp paprika

  • Salt and pepper, to taste

  • 1 head of iceberg or butter lettuce

  • 1 avocado, diced

  • 1/4 cup chopped fresh cilantro

  • Juice of 1 lime

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and minced garlic, and sauté for 2-3 minutes until the vegetables are slightly softened.

  2. Add the ground turkey to the skillet and cook until browned and cooked through, breaking up any clumps with a wooden spoon.

  3. Stir in the cumin, chili powder, paprika, salt, and pepper until the spices are evenly distributed throughout the meat mixture.

  4. Remove the skillet from the heat and stir in the diced avocado, chopped cilantro, and lime juice.

  5. Rinse and dry the lettuce leaves, and use them as a base for the turkey and avocado mixture.

  6. Spoon the turkey mixture onto the lettuce leaves and wrap them up like a burrito.

  7. Serve the lettuce wraps immediately and enjoy!
