2 large avocados
1 can (5 oz) of tuna, drained
1/4 cup diced red bell pepper
1/4 cup diced cucumber
2 tablespoons diced red onion
2 tablespoons chopped fresh cilantro
2 tablespoons plain Greek yogurt
1 tablespoon lemon juice
Salt and pepper to taste
Directions
Cut the avocados in half and remove the pits. Scoop out some of the flesh from each half to create a larger cavity for the tuna salad.
In a mixing bowl, combine the drained tuna, diced bell pepper, cucumber, red onion, cilantro, Greek yogurt, and lemon juice. Mix well to combine.
Season the tuna salad mixture with salt and pepper to taste.
Spoon the tuna salad into the hollowed-out avocado halves, filling each avocado half generously.
Serve immediately or refrigerate until ready to eat.
