Ingredients

  • 2 large avocados

  • 1 can (5 oz) of tuna, drained

  • 1/4 cup diced red bell pepper

  • 1/4 cup diced cucumber

  • 2 tablespoons diced red onion

  • 2 tablespoons chopped fresh cilantro

  • 2 tablespoons plain Greek yogurt

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

Directions

  • Cut the avocados in half and remove the pits. Scoop out some of the flesh from each half to create a larger cavity for the tuna salad.

  • In a mixing bowl, combine the drained tuna, diced bell pepper, cucumber, red onion, cilantro, Greek yogurt, and lemon juice. Mix well to combine.

  • Season the tuna salad mixture with salt and pepper to taste.

  • Spoon the tuna salad into the hollowed-out avocado halves, filling each avocado half generously.

  • Serve immediately or refrigerate until ready to eat.
