Ingredients

  • 2 large bell peppers (red, yellow, or green)

  • 1 can of tuna, drained

  • 1/4 cup diced celery

  • 1/4 cup diced red onion

  • 2 tbsp mayonnaise

  • 1 tbsp Dijon mustard

  • Salt and pepper, to taste

  • Optional toppings: shredded cheese, chopped tomatoes, avocado slices, cilantro, hot sauce

Directions

  1. Preheat your oven to 375°F (190°C).

  2. Cut the bell peppers in half lengthwise, and remove the seeds and membranes.

  3. In a mixing bowl, combine the tuna, celery, red onion, mayonnaise, Dijon mustard, salt, and pepper.

  4. Stuff the tuna mixture into the bell pepper halves, dividing it evenly between each pepper.

  5. Place the stuffed bell peppers on a baking sheet, and bake for 25-30 minutes, or until the peppers are tender and the filling is heated through.

  6. Remove from the oven, and add your desired toppings before serving.
