For the Three Eggs Scramble:

  • 6 large eggs (preferably pasture-raised or organic)

  • 1/4 cup shredded cheddar cheese (use a high-quality cheese without additives)

  • Salt and pepper to taste

For the Side of Turkey Bacon:

  • 6 slices of nitrate-free turkey bacon (look for brands with minimal additives)

  1. Preheat a non-stick skillet over medium heat. While the skillet is heating up, prepare the turkey bacon according to the package instructions. Cooking time may vary depending on the brand.

  2. In a mixing bowl, crack the eggs and whisk them together until well combined. Season the eggs with a pinch of salt and pepper, according to your taste preferences.

  3. Once the skillet is hot, pour the whisked eggs into the pan. Allow them to cook for a few seconds until they start to set around the edges.

  4. Gently push the cooked edges toward the center of the pan with a spatula, allowing the uncooked egg to flow to the edges. Continue this process until the eggs are mostly cooked but still slightly runny.

  5. Sprinkle the shredded cheddar cheese over the partially cooked eggs, and gently fold the cheese into the eggs, continuing to cook until the eggs are fully cooked and the cheese is melted.

  6. By this time, your turkey bacon should be ready as well. Transfer the scrambled eggs to a plate and serve them with the crispy turkey bacon on the side.
