2 grilled chicken breast halves, cut into cubes
For Slaw:
1 (16oz bag) shredded cabbage or 1 medium head
1 seedless cucumber, sliced thin
1 red bell pepper, seeded and thinly sliced
4 scallions, thinly sliced
20 leaves of fresh herbs (mint, cilantro, and basil)
Dressing:
½ tsp crushed red pepper flakes
1 garlic clove, minced
¼ cup red wine vinegar
2 tsp truvia, or stevia
2 tbsp Braggs Liquid Amino (tastes like soy sauce)
2 tbsp olive oil
juice of 1 lime
Directions
In a large bowl, combine the shredded cabbage, cucumber slices, red bell pepper slices, sliced scallions, and fresh herbs (mint, cilantro, and basil). Toss them together to mix well.
In a small bowl, prepare the dressing by combining crushed red pepper flakes, minced garlic, red wine vinegar, Truvia or stevia, Bragg's Liquid Aminos, olive oil, and the juice of 1 lime. Whisk the dressing ingredients together until well combined.
Pour the dressing over the slaw mixture and toss to coat the vegetables evenly with the dressing.
Add the grilled chicken breast cubes to the slaw mixture and gently toss to incorporate the chicken with the vegetables and dressing.
