Ingredients

  • 1 boneless, skinless chicken breast

  • 1/3 cup plain, non-fat Greek yogurt

  • 1/4 tbsp olive oil

  • Olive oil cooking spray

  • 2 tsp minced onion

  • 1 tsp grated fresh ginger

  • 1/2 tsp cumin

  • 1/4 tsp crushed red pepper

  • 1/8 tsp turmeric

  • 1 garlic clove, minced

  • 1/8 tsp sea salt

Directions

  1. Preheat your oven to 400°F (200°C).


  2. In a bowl, combine the Greek yogurt, olive oil, minced onion, grated ginger, cumin, crushed red pepper, turmeric, minced garlic, and sea salt. Mix well until all the ingredients are evenly incorporated.


  3. Place the chicken breast in a shallow dish and pour the yogurt marinade over it. Ensure that the chicken breast is coated with the marinade on all sides. Let it marinate for at least 30 minutes to allow the flavors to develop.


  4. Lightly grease a baking sheet with olive oil cooking spray to prevent sticking.


  5. Remove the chicken breast from the marinade, allowing any excess marinade to drip off. Place the chicken breast on the prepared baking sheet.


  6. Bake the chicken in the preheated oven for about 20-25 minutes or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through. You can also grill the chicken over medium-high heat for 8-10 minutes per side if desired.


  7. Once cooked, remove the chicken from the oven or grill and let it rest for a few minutes.


  8. Slice the Tandoori Spiced Chicken breast and serve it hot. You can garnish it with fresh cilantro or a squeeze of lemon juice if desired.
