Ingredients

  • 1 cup fresh strawberries, hulled and sliced

  • 4 tablespoons apple cider vinegar

  • 2 tablespoons powdered erythritol (or another low-carb sweetener of your choice)

  • 1/2 teaspoon Dijon mustard

  • 1/4 teaspoon sea salt

  • 1/4 cup extra-virgin olive oil

  • 1 tablespoon poppy seeds

Directions

  1. In a blender or food processor, add the fresh strawberries, apple cider vinegar, powdered erythritol, Dijon mustard, and sea salt. Blend until the strawberries are completely pureed and the mixture is smooth.

  2. Slowly drizzle in the extra-virgin olive oil while the blender is running. Continue blending until the dressing has emulsified and thickened slightly.

  3. Transfer the dressing to a bowl and stir in the poppy seeds. Make sure the poppy seeds are evenly distributed throughout the dressing.
