6-7 medium strawberries
1/2 cup full-fat coconut milk
1 tbsp fresh lime juice
1/4 cup water
1/4 tsp vanilla extract
1-2 drops of liquid stevia or 1 tbsp of erythritol (or any other low-carb sweetener of your choice)
1/4 tsp ground cinnamon
A pinch of sea salt
Optional: 1 tbsp chia seeds for added texture and nutrition
Directions
Rinse the strawberries under cold water to remove any dirt or debris. Remove the green tops and cut the strawberries into smaller pieces.
In a blender or food processor, add the strawberries, coconut milk, lime juice, water, vanilla extract, sweetener, ground cinnamon, and a pinch of sea salt.
Blend the ingredients until smooth and well combined. If you prefer a chunkier texture, blend it to your desired consistency.
