2 large bell peppers (any color)
1/2 pound ground turkey
1/4 cup diced onion
1/4 cup diced celery
1/4 cup diced bell pepper (from tops)
2 cloves garlic, minced
1 teaspoon olive oil
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil
Optional: Additional grated Parmesan cheese for topping
Directions
Preheat your oven to 375°F (190°C). Prepare a baking dish by greasing it lightly with olive oil or using non-stick cooking spray.
Cut the tops off the bell peppers and remove the seeds and membranes from the inside. Dice the tops of the bell peppers and set aside the diced pieces.
In a large skillet, heat the olive oil over medium heat. Add the diced onion, celery, diced bell pepper, and minced garlic. Sauté for about 3-4 minutes until the vegetables become tender.
Add the ground turkey to the skillet and cook, breaking it up with a spatula, until it is no longer pink and cooked through.
Stir in the dried oregano, dried basil, salt, and black pepper. Cook for an additional 1-2 minutes to allow the flavors to combine.
Remove the skillet from heat and stir in the grated Parmesan cheese, chopped parsley, and chopped basil. Mix well to combine all the ingredients.
Stuff the bell peppers with the turkey mixture and place them in the prepared baking dish. If desired, sprinkle some additional grated Parmesan cheese on top of the stuffed peppers.
Bake in the preheated oven for about 25-30 minutes until the peppers are tender and the filling is heated through.
Once cooked, remove the stuffed peppers from the oven and let them cool for a few minutes before serving.
