Ingredients
1 cup of strawberries, frozen
1/2 cup of coconut milk or heavy cream
1 tablespoon of lemon juice
2 tablespoons of erythritol or monk fruit sweetener
Directions
Freeze the fresh strawberries for at least 1 hour, or use already frozen strawberries.
In a blender, combine the frozen strawberries, coconut milk or heavy cream, lemon juice, and sweetener. Blend until smooth and creamy.
If the mixture is too thick, you can add a small amount of water to help blend it more easily.
You can serve it immediately or freeze it for a firmer texture. If frozen, let it sit at room temperature for a few minutes to soften before serving.
