Ingredients

  • 8 oz (225g) lean steak (grass-fed, if possible)

  • 4 cups fresh spinach leaves (organic)

  • 1/4 cup pepitas (pumpkin seeds)

  • 1 avocado, sliced (organic)

  • 1/4 red onion, thinly sliced

  • 1/4 cup cherry tomatoes, halved (organic)

  • 1 tbsp olive oil (extra-virgin)

  • Salt and pepper to taste


Avocado-Lime Dressing:


  • 1 ripe avocado (organic)

  • 1/4 cup fresh cilantro, chopped

  • Juice of 2 limes

  • 2 cloves garlic, minced

  • 2 tbsp plain Greek yogurt

  • 2 tbsp water

  • Salt and pepper to taste

Directions

  1. Preheat a grill or grill pan over medium-high heat.

  2. Season the lean steak with salt and pepper. Grill the steak for about 4-6 minutes per side or until your preferred level of doneness. Let it rest for a few minutes before slicing it thinly against the grain.

  3. While the steak is grilling, prepare the Avocado-Lime Dressing. In a blender or food processor, combine the avocado, cilantro, lime juice, minced garlic, Greek yogurt, water, salt, and pepper. Blend until smooth. If needed, add more water to achieve your desired consistency.

  4. In a large salad bowl, toss the fresh spinach leaves, pepitas, sliced avocado, red onion, and cherry tomatoes.

  5. Arrange the sliced grilled steak on top of the salad.

  6. Drizzle the Avocado-Lime Dressing over the salad or serve it on the side.

  7. Finish with a drizzle of extra-virgin olive oil and a sprinkle of salt and pepper to taste.
