Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 cup fresh spinach, chopped

  • 1/4 cup crumbled feta cheese

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • Toothpicks

Directions

  1. Preheat your oven to 375°F (190°C).

  2. In a mixing bowl, combine the chopped spinach, crumbled feta cheese, minced garlic, salt, and pepper.

  3. Butterfly the chicken breasts by cutting them horizontally almost all the way through, then opening them like a book.

  4. Stuff each chicken breast with the spinach and feta mixture, then use toothpicks to secure the edges.

  5. Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and cook for 2-3 minutes on each side until golden brown.

  6. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through.

  7. Remove the toothpicks, slice the chicken, and serve with your favorite sides.
