Ingredients
1 cup fresh spinach, chopped
2 large eggs
2 egg whites
1/4 cup shredded low-fat cheese (such as mozzarella or cheddar)
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
Salt and pepper to taste
Cooking spray or 1 teaspoon olive oil
Directions
Preheat your oven to 350°F (175°C).
In a medium-sized mixing bowl, whisk together the eggs, egg whites, garlic powder, dried oregano, salt, and pepper.
Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or olive oil.
Add the chopped spinach to the skillet and cook until wilted, stirring occasionally. This should take about 2-3 minutes.
Pour the egg mixture into the skillet, making sure the spinach is evenly distributed.
Sprinkle the shredded cheese over the top of the egg mixture.
Cook the frittata on the stovetop for about 2-3 minutes, or until the edges start to set.
Transfer the skillet to the preheated oven and bake for about 10-12 minutes, or until the eggs are fully set and the cheese is melted and slightly golden.
Remove the frittata from the oven and let it cool for a few minutes.
Cut the frittata into wedges and serve. You can enjoy it warm or at room temperature.
