Ingredients

  • 1 cup fresh spinach, chopped

  • 2 large eggs

  • 2 egg whites

  • 1/4 cup shredded low-fat cheese (such as mozzarella or cheddar)

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon dried oregano

  • Salt and pepper to taste

  • Cooking spray or 1 teaspoon olive oil

Directions

  1. Preheat your oven to 350°F (175°C).

  2. In a medium-sized mixing bowl, whisk together the eggs, egg whites, garlic powder, dried oregano, salt, and pepper.

  3. Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or olive oil.

  4. Add the chopped spinach to the skillet and cook until wilted, stirring occasionally. This should take about 2-3 minutes.

  5. Pour the egg mixture into the skillet, making sure the spinach is evenly distributed.
