1 tbsp olive oil
½ tsp red pepper flakes
2 cups lightly packed baby spinach
12 asparagus tips
2 tilapia fillets (3 to 4 oz each)
2 scallions, sliced
2 lime quarters
sea salt and pepper to taste
Directions
In a large skillet, heat the olive oil over medium heat.
Add the red pepper flakes and sauté for about 1 minute to infuse the oil with the spice.
Add the baby spinach and asparagus tips to the skillet. Sauté until the spinach wilts and the asparagus are slightly tender, about 3-4 minutes. Remove the vegetables from the skillet and set them aside.
