Ingredients

  • 1 green tomato, sliced

  • 1 small red onion, sliced

  • Juice of 2 limes

Directions

  1. In a large bowl, combine the sliced green tomato, red onion, lime juice, green bell pepper, minced garlic, chopped cilantro, and jalapeño peppers.

  2. In a separate small bowl, mix together the cumin powder, smoked paprika, sea salt, and pepper.

  3. Sprinkle the spice mixture over the vegetables in the large bowl and toss everything together until well combined.

  4. Heat olive oil in a skillet over medium heat. Once the oil is hot, add the seasoned vegetable mixture to the skillet.
