Spicy Green Tomato
This Spicy Green Tomato recipe is a delicious and easy-to-make low-carb side dish that's bursting with flavor! Roasted green tomatoes, red onions, green bell peppers, and jalapeños are seasoned with lime juice, cumin, and smoked paprika to create a zesty, slightly spicy dish that's perfect for any occasion.
This dish pairs well with grilled meats, fish, or tofu, and can also be served alongside other vegetables or salads. To add a creamy element, try topping it with crumbled feta cheese or a dollop of plain Greek yogurt.
1 green tomato, sliced
1 small red onion, sliced
Juice of 2 limes
1 green bell pepper, sliced
2 cloves garlic, minced
1/4 cup fresh cilantro, chopped
1-2 jalapeño peppers, sliced
1 tsp cumin powder
1 tsp smoked paprika
Sea salt and pepper to taste
2 tbsp olive oil
In a large bowl, combine the sliced green tomato, red onion, lime juice, green bell pepper, minced garlic, chopped cilantro, and jalapeño peppers.
In a separate small bowl, mix together the cumin powder, smoked paprika, sea salt, and pepper.
Sprinkle the spice mixture over the vegetables in the large bowl and toss everything together until well combined.
Heat olive oil in a skillet over medium heat. Once the oil is hot, add the seasoned vegetable mixture to the skillet.
Sauté the vegetables for about 5-7 minutes, or until they become tender and slightly caramelized, stirring occasionally.
Remove the skillet from heat and transfer the spicy green tomato mixture to a serving plate.
Serve the Spicy Green Tomato as a side dish with your main course, or you can enjoy it on its own.
