Ingredients

  • 2 large eggs

  • 1 ounce (28 grams) of smoked salmon, chopped

  • 1/4 small red onion, finely chopped

  • 1/4 cup fresh spinach, chopped

  • 1 teaspoon olive oil

  • Salt and pepper to taste

  • Fresh dill, chopped (for garnish)

  • 1/2 cup mixed fresh berries (such as strawberries, blueberries, and raspberries)

Directions

  1. In a small bowl, whisk the eggs until well beaten. Season with salt and pepper.

  2. Heat the olive oil in a non-stick skillet over medium heat.

  3. Add the chopped red onion and cook for about 2 minutes until softened.

  4. Add the chopped spinach to the skillet and cook for an additional 1-2 minutes until wilted.
