Ingredients
Smoked Salmon and Cream Cheese Roll-Ups:
Ingredients:
8 slices of smoked salmon (about 4 ounces)
4 tablespoons cream cheese (full-fat, if possible)
2 tablespoons chopped fresh dill
1 tablespoon capers (optional)
1/2 cucumber, thinly sliced
Freshly ground black pepper, to taste
Side of Mixed Berries:
Ingredients:
1 cup mixed berries (such as strawberries, blueberries, and raspberries)
1 teaspoon lemon juice
1 teaspoon fresh mint leaves, chopped (optional)
Directions
Lay the smoked salmon slices flat on a clean cutting board or plate.
Spread 2 tablespoons of cream cheese evenly over each slice of smoked salmon.
Sprinkle the chopped fresh dill and capers (if using) over the cream cheese layer.
Place a few thin cucumber slices on top of the dill and capers, running along the length of the smoked salmon slice.
Season with freshly ground black pepper to taste.
Carefully roll up each slice of smoked salmon, starting from one end and rolling tightly until you have a neat roll-up.
Secure each roll-up with a toothpick if needed.
Repeat the process for the second serving.
In a mixing bowl, combine the mixed berries and gently toss them with lemon juice.
Sprinkle the chopped fresh mint leaves (if using) over the berries and gently mix again.
