1 pound boneless, skinless chicken breasts, diced
1 cup low-sodium chicken broth

1 tablespoon rice vinegar
1 tablespoon honey
1 tablespoon minced garlic
1 tablespoon minced ginger
1/2 teaspoon red pepper flakes
1 head iceberg lettuce, leaves separated and washed

In a slow cooker, whisk together the chicken broth, soy sauce, rice vinegar, honey, garlic, ginger, and red pepper flakes.
Add the diced chicken to the slow cooker and stir to coat with the sauce.
Cover the slow cooker and cook on high for 2-3 hours or on low for 4-5 hours, until the chicken is cooked through and tender.
Once the chicken is done, use a slotted spoon to remove it from the slow cooker and transfer it to a plate.
To assemble the lettuce wraps, take a lettuce leaf and place a few pieces of chicken in the center.
Top with any desired toppings, such as sliced green onions, chopped peanuts, or cilantro.
Fold the lettuce leaf around the chicken and toppings, like a taco or wrap, and enjoy!
