1 pound boneless, skinless chicken breasts, diced
1 cup low-sodium chicken broth
1/4 cup low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 tablespoon minced garlic
1 tablespoon minced ginger
1/2 teaspoon red pepper flakes
1 head iceberg lettuce, leaves separated and washed

Directions
In a slow cooker, whisk together the chicken broth, soy sauce, rice vinegar, honey, garlic, ginger, and red pepper flakes.
Add the diced chicken to the slow cooker and stir to coat with the sauce.
Cover the slow cooker and cook on high for 2-3 hours or on low for 4-5 hours, until the chicken is cooked through and tender.
