Ingredients

  • 170g raw shrimp (40g protein)

  • 4 medium zucchinis, spiralized into noodles

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1/4 teaspoon red pepper flakes (optional)

  • Juice of 1 lemon

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

Directions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.

  2. Add the minced garlic and red pepper flakes (if using) to the skillet and sauté for about 1 minute until fragrant.

  3. Add the shrimp to the skillet and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

  4. In the same skillet, add the remaining 1 tablespoon of olive oil. Add the zucchini noodles and sauté for 2-3 minutes until they are tender but still slightly crisp.

  5. Return the cooked shrimp to the skillet with the zucchini noodles.

  6. Squeeze the lemon juice over the shrimp and zucchini noodles. Season with salt and pepper to taste. Toss everything together until well combined.

  7. Cook for another minute or so, just until everything is heated through.

  8. Remove from heat and garnish with fresh parsley.

  9. Divide the shrimp scampi and zucchini noodles into two servings and serve immediately.
