Ingredients

For the Salad:

- 1 pound cooked shrimp, peeled and deveined

- 6 cups romaine lettuce, washed and torn into bite-sized pieces

- 1/4 cup grated Parmesan cheese

 

For the Chipotle Caesar Dressing:

- 1/2 cup Greek yogurt (plain, low-fat)

- 2 tablespoons mayonnaise (light)

- 2 tablespoons freshly squeezed lemon juice

- 1 tablespoon grated Parmesan cheese

- 1-2 chipotle peppers in adobo sauce, chopped (adjust to taste)

- 1 clove garlic, minced

- Salt and pepper, to taste

Directions

1. In a large bowl, combine the cooked shrimp, romaine lettuce, and grated Parmesan cheese.

 

2. In a blender or food processor, combine all the dressing ingredients: Greek yogurt, mayonnaise, lemon juice, grated Parmesan cheese, chopped chipotle peppers, minced garlic, salt, and pepper. Blend until smooth and creamy.

 

3. Drizzle the chipotle Caesar dressing over the shrimp and romaine lettuce mixture. Toss gently to coat everything evenly.

 

4. Divide the salad into individual serving plates.
