Ingredients

  • 1/2 cup firm tofu, crumbled

  • 1/4 cup bell peppers (red, green, or a mix), diced

  • 1/4 cup onions, diced

  • 1 tablespoon olive oil

  • 1/4 teaspoon turmeric (for that lovely yellow color)

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon paprika

  • Salt and pepper to taste

  • 1/4 cup shredded cheese (use a low-fat variety for a healthier option)

Directions

  1. Start by heating a non-stick skillet over medium heat and add the olive oil.

  2. Once the oil is hot, toss in the diced onions and bell peppers. Sauté them until they become tender and slightly caramelized, for about 3-4 minutes.

  3. While the veggies cook, crumble the firm tofu into a bowl. You can use your hands or a fork to achieve a scrambled egg-like texture.

  4. Once the onions and bell peppers are ready, add the crumbled tofu to the skillet. Mix everything well so that the tofu is coated with the flavors from the veggies.

  5. Now, let's add our delicious spices - turmeric, garlic powder, onion powder, paprika, salt, and pepper. Stir everything until the spices are evenly distributed, and your tofu gets that vibrant yellow color.

  6. Continue cooking the tofu for another 3-4 minutes until it's heated through and infused with all the flavors.

  7. Finally, let's finish off our dish with a sprinkle of shredded cheese on top. The cheese will add a lovely creaminess to the scrambled tofu.

  8. Give it a minute or so for the cheese to melt, and once it does, turn off the heat.

  9. Transfer the Scrambled Tofu with Bell Peppers, Onions, and Cheese to a plate, and you're ready to dig in!
