Ingredients

  • 2 large eggs

  • 1/2 cup fresh spinach, roughly chopped

  • 1/4 cup cheddar cheese, shredded

  • 1/2 tablespoon butter or olive oil

  • Salt and pepper to taste

Directions

  1. Crack the eggs into a bowl and beat them until the yolks and whites are fully combined.

  2. Heat a non-stick skillet over medium heat. Add the butter or olive oil and allow it to melt.

  3. Add the chopped spinach to the skillet and cook, stirring frequently, until the spinach is wilted. This should only take a couple of minutes.

  6. Sprinkle the shredded cheddar cheese over the eggs and stir gently to combine. The heat from the eggs will melt the cheese.

  7. Season your scrambled eggs with salt and pepper to taste. Remove the skillet from the heat. The residual heat will finish cooking the eggs without overcooking them.
