2 large eggs
1/2 cup fresh spinach, roughly chopped
1/4 cup cheddar cheese, shredded
1/2 tablespoon butter or olive oil
Salt and pepper to taste
Crack the eggs into a bowl and beat them until the yolks and whites are fully combined.
Heat a non-stick skillet over medium heat. Add the butter or olive oil and allow it to melt.
Add the chopped spinach to the skillet and cook, stirring frequently, until the spinach is wilted. This should only take a couple of minutes.
Pour the beaten eggs over the wilted spinach in the skillet. Let them cook undisturbed for a few moments until they start to set around the edges.
Using a spatula, gently push the eggs from the edges toward the center. Let them sit for a moment again, then repeat the pushing and stirring, until the eggs are mostly cooked but still slightly runny.
