2 large eggs
1 cup fresh spinach, chopped
2 turkey sausage links (check for low-carb options or make your own)
1 tablespoon olive oil or coconut oil
Salt and pepper to taste
Directions
Preheat a non-stick skillet over medium heat and add the olive oil or coconut oil.
Remove the turkey sausage from the casings if necessary and crumble it into the skillet. Cook until browned and cooked through. Remove from the skillet and set aside.
In the same skillet, add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from the skillet and set aside.
In a bowl, whisk the eggs together with salt and pepper.
Pour the beaten eggs into the skillet and cook over medium heat, stirring gently with a spatula until the eggs are scrambled and cooked to your desired consistency.
