2 large eggs
1 cup fresh spinach leaves
1/4 cup crumbled feta cheese
1/2 cup cherry tomatoes, halved
Salt and pepper to taste
1 tbsp olive oil
Heat a non-stick pan over medium heat.
Add the olive oil to the pan.
Add the spinach and cherry tomatoes to the pan and sauté for 2-3 minutes or until the spinach is wilted.
In a small bowl, whisk the eggs together.
Add the eggs to the pan with the spinach and tomatoes and scramble until cooked through.
Season with salt and pepper to taste.
Sprinkle the crumbled feta cheese over the top of the scrambled eggs.
Serve with black coffee or tea.
