  • 2 large eggs

  • 1 cup fresh spinach leaves

  • 1/4 cup crumbled feta cheese

  • 1/2 cup cherry tomatoes, halved

  • Salt and pepper to taste

  • 1 tbsp olive oil


  1. Heat a non-stick pan over medium heat.

  2. Add the olive oil to the pan.

  3. Add the spinach and cherry tomatoes to the pan and sauté for 2-3 minutes or until the spinach is wilted.

  4. In a small bowl, whisk the eggs together.
