Ingredients

  • 4 large eggs (organic, if possible)

  • 1 cup fresh spinach, chopped

  • 100g smoked salmon, chopped

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Optional: Fresh herbs (such as chives or dill) for garnish

Directions

  1. Heat olive oil in a non-stick pan over medium heat.

  2. Add chopped spinach to the pan and sauté until wilted, about 2-3 minutes.

  3. In a bowl, whisk the eggs together and season with salt and pepper.

  4. Pour the eggs into the pan with the sautéed spinach, stirring gently to scramble.

  5. Once the eggs are almost set, add the chopped smoked salmon and continue stirring until fully cooked.
