Ingredients

  • 2 cups cooked wild rice (organic, if possible)

  • 1.5 lbs boneless, skinless chicken breast, diced

  • 1 cup broccoli florets, steamed

  • 1 cup cauliflower florets, steamed

  • 1 cup bell peppers, diced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup low-fat shredded cheddar cheese

  • 1 cup unsweetened almond milk

  • 2 tablespoons olive oil

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

Directions

  1. Preheat your oven to 375°F (190°C).

  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned.

  3. Add onions and garlic to the skillet, sautéing until softened.

  4. In a large mixing bowl, combine cooked wild rice, steamed broccoli, cauliflower, bell peppers, cherry tomatoes, and the chicken mixture.

  5. Stir in almond milk, dried thyme, dried oregano, salt, and pepper. Mix well to combine.

  6. Transfer the mixture to a greased casserole dish and top with shredded cheddar cheese.

  7. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.

  8. Remove from the oven, let it cool for a few minutes, and serve.
