Ingredients

For the Salmon Cakes:

1 lb salmon fillets, skinless and boneless

1/4 cup almond flour

1/4 cup finely chopped green onions

1/4 cup finely chopped red bell pepper

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon Old Bay seasoning

1/2 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil for frying


For the Garlic Aioli:

1/2 cup mayonnaise

1 clove garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

Directions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a mixing bowl, flake the salmon into small pieces using a fork.

  3. Add almond flour, green onions, red bell pepper, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, garlic powder, salt, and pepper to the bowl. Mix well to combine all the ingredients.

  4. Shape the salmon mixture into patties, about 1/2-inch thick.

  5. Heat olive oil in a large skillet over medium heat. Add the salmon patties and cook for about 3-4 minutes per side until golden brown.

  6. Transfer the partially cooked salmon cakes to the prepared baking sheet and bake in the preheated oven for an additional 10-12 minutes, or until the patties are cooked through.

  7. While the salmon cakes are baking, prepare the garlic aioli by combining mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl. Stir well to combine.

  8. Once the salmon cakes are done, remove them from the oven and let them cool for a few minutes.

  9. Serve the salmon cakes with a dollop of garlic aioli on top or on the side.
