For the turkey lettuce wrap:
4-6 large lettuce leaves (such as iceberg or romaine)
4-6 slices of roasted turkey breast
1/4 cup sliced cucumber
1/4 cup sliced bell peppers
1/4 cup sliced red onion
1 tablespoon chopped fresh parsley
Salt and pepper to taste
For the sugar-free cranberry sauce:
1 cup fresh or frozen cranberries
1/4 cup water
1/4 cup granulated sugar substitute (such as erythritol or stevia)
1/2 teaspoon grated orange zest (optional)
Directions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Place the turkey slices on the prepared baking sheet and season with salt and pepper. Bake in the preheated oven for about 10-12 minutes or until heated through.
While the turkey is roasting, prepare the sugar-free cranberry sauce. In a small saucepan, combine the cranberries, water, and sugar substitute. Bring to a boil over medium heat, then reduce the heat to low. Simmer for about 10 minutes, stirring occasionally, until the cranberries burst and the sauce thickens slightly. Remove from heat and stir in the grated orange zest, if desired. Set aside to cool.
