Ingredients

  • 18 fresh okra pods, sliced 1/3 inch thick

  • 2 tbsp avocado oil

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp cumin

  • 1/2 tsp coriander

  • 1/2 tsp sea salt

  • 1/4 tsp black pepper

Directions

  1. Preheat your oven to 425°F (220°C).


  2. In a large mixing bowl, combine the sliced okra pods, avocado oil, smoked paprika, garlic powder, onion powder, cumin, coriander, sea salt, and black pepper. Toss well to ensure all the okra slices are evenly coated with the spices and oil.


  3. Arrange the seasoned okra slices in a single layer on a baking sheet lined with parchment paper or a silicone baking mat. Make sure the slices are spread out and not overlapping.


  4. Place the baking sheet with the okra in the preheated oven. Roast for about 15-20 minutes, or until the okra becomes tender and slightly crispy. You can check for doneness by inserting a fork into one of the slices to see if it easily pierces through.


  5. Once the okra is roasted to your desired texture, remove it from the oven and let it cool for a few minutes before serving.


  6. Transfer the roasted okra to a serving dish or plate and enjoy it as a delicious side dish or snack.
