For the roast beef:
4-6 ounces of lean beef (such as sirloin or eye of round)
1 tablespoon olive oil
Salt and pepper to taste
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
For the mashed cauliflower:
1 cup cauliflower florets
1 tablespoon butter
2 tablespoons heavy cream

For the sugar-free gravy:
1 cup beef broth (low sodium)
1/2 tablespoon cornstarch
1/4 teaspoon Worcestershire sauce

Directions
Preheat the oven to 375°F (190°C).
Rub the lean beef with olive oil and season it with salt, pepper, dried thyme, and garlic powder.
Place the seasoned beef in a roasting pan and roast it in the preheated oven for about 20-25 minutes or until it reaches your desired level of doneness. Remove from the oven and let it rest for a few minutes before slicing.
While the beef is roasting, steam the cauliflower florets until they are tender. Drain any excess moisture.
In a separate bowl, mash the cauliflower with a potato masher or fork. Add butter, heavy cream, salt, and pepper. Continue mashing until you reach a creamy consistency. Adjust the seasoning to taste.
For the gravy, heat the beef broth in a saucepan over medium heat. In a small bowl, mix the cornstarch with a tablespoon of cold water until it dissolves. Slowly add the cornstarch mixture to the beef broth while stirring continuously. Bring the mixture to a boil and cook for a few minutes until it thickens. Add Worcestershire sauce, salt, and pepper.
